Oaty Banana Bread

A hearty take on classic banana bread

Ingredients

1¼ cup (185g) plain flour

½ cup (110g) brown sugar

½ tsp bicarbonate of soda

¼ tsp baking powder

1 tsp cinnamon

1 cup (90g) Uncle Tobys Traditional Cooking Oats, plus ¼ cup (20g) extra

3 large ripe bananas

3 tsp canola oil

1 egg, beaten

2 egg whites

Method

Preheat oven to 180°C/160°C fan forced. Grease a 23x12cm loaf pan and line it with baking paper.

In a large bowl, combine the flour, sugar, bicarbonate of soda, baking powder and cinnamon. Stir through the Uncle Tobys Traditional Cooking Oats.

In a medium bowl, mash the bananas with a potato masher or fork. Add oil, whole egg and egg whites, and mix thoroughly.

Pour the batter into the pan and top with extra Uncle Tobys Traditional Cooking Oats. Bake for 45 minutes or until cooked through. Remove from oven and allow to cool in the pan for 5 minutes. Flip out and cool on a wire rack for another 10 minutes. Slice the loaf into 10 equally sized slices.
