Ingredients
Smoothie
760g frozen pineapple
240g frozen banana
800ml coconut milk
8g blue algae powder
Granola
32g Uncle Tobys Oats
8g puffed brown rice
8g puffed spelt
30ml coconut oil
24ml maple syrup
25g sunflower seeds
30g pumpkin seeds
15g dried cranberries
25g honey
Garnish
30g coconut flakes
1 tbsp blueberries
Edible flowers (optional)
Method
Smoothie
Blend all ingredients together in a food processor.
Granola
Mix all the ingredients in a bowl, add maple syrup and honey and stir through.
Bake at 110°C for 1½ hours in a preheated oven.
Spoon the smoothie into a bowl and swirl with a spoon, then top with granola, dried coconut, blueberries and edible flowers.
Note: Due to the thickness of the smoothie ingredients, during food processing it may be necessary to switch off the machine and stir the mixture with a spatula.
